Milling Processes

  • Washed Washed Process

    A traditional process that highlights bright acidity, cup cleanliness, and the genuine floral and fruity character of the origin.

  • Natural Natural / Dry Process

    Dried with the full cherry. Results in cups with heavy body, intense sweetness, and pronounced notes of ripe fruit and wine.

  • Honey SEMI-WASHED

    The pulp is removed but the mucilage is left on. A perfect balance between the acidity of a washed process and the sweetness of a natural.

  • Experimental CONTROLLED FERMENTATIONS

    Innovative lots featuring carbonic maceration or anaerobic fermentations for exotic and disruptive profiles.
